Salivary glands are found throughout the mouth except the front area of the palate. The glands fall into two groups: major and minor glands. Because the glands have ducts, they are called exocrine glands. They secrete saliva, mucus and enzymes.
The major group consists of the parotid, submandibular and sublingual salivary glands. The parotid glands are the largest and are located on the each side of the upper jaw in front of the ear. They release their secretion into the mouth through Stensen's Duct. The duct opens inside the mouth next to the upper second molar. This gland secretes mainly a serous clear watery saliva.
The pair of submandibular glands are located on the inner aspect of the lower jaw. There is one on each side and secretes saliva into the mouth through Wharton's Duct. The duct opens into the floor of the mouth under the side of the tongue. Even though they are smaller than the parotid glands, the submandibular glands secrete 70% of all the saliva in the mouth. The saliva from this gland is a mixture of serous fluid and mucus. This fluid is mainly used for lubrication and some digestion.
There are two sublingual glands located in the floor of the mouth towards the front. They are positioned behind the lower front teeth. These glands secrete mainly a mucuos saliva through several openings called the ducts of Rivinus. There is also a larger duct called Bartholin's Duct that helps secrete the saliva from this gland. Sublingual glands contribute approximately 5% of the mouth's saliva.
The minor salivary glands secrete mucus saliva throughout the mouth. They are small and are located in the oral mucosa of the lips, cheeks, palate and tongue. Von Ebner's glands are found in certain types of papillae of the tongue. They secrete a serous fluid that starts the breakdown of fats. These glands are also involved with a component of taste.
